Why is it that muffins seam to be the go-to comfort food? Is it the smaller size of the
cake muffin that allows us to indulge in the pleasure of sugars without the guilt? Or is it because they're simply quick and easy to make?
1. Preheat oven to 350°F
2. Sift together:
1 ¾ cup sifted flour
2 ¼ tsp. baking powder
½ tsp. salt
3. Blend until creamy:
1/3 cup shortening
2/3 cup sugar
¾ tsp. lemon juice
4. Beat in:
2 beaten eggs
3 ripe bananas
5. Gradually, in 3 separate times, add sifted ingredients into the sugar mixture.
6. Beat the batter after each addition until smooth.
7. Pour batter into lined muffin tins.
8. Bake for about 20 to 25 minutes. (Test with toothpick for doneness)
